Recipes for when you’re sick

It’s flu, cold, and whatever other illness you can ever catch season. As much as medicine helps, home remedies are much better because they make you feel better physically AND emotionally! I’ve done my fair share of salt water gurgles and eaten a fair amount of spicy foods to clear my sinuses, but all in all my favorite “medicine” is a good glass of hot tea and a bowl of my favorite soup. Here are the recipes for my favorite sick comfort foods!

 

Russian Tea

  • 1 large can pineapple juice
  • 1 large can frozen orange juice
  • 6 tea bags
  • 3 quarts water
  • 4 lemons
  • 3 cups sugar
  • 3 cinnamon sticks

Take 2 quarts water and put in a large pan. Add sugar and cinnamon sticks and bring to a boil.

Take 1 quart water and put in small saucepan and bring to a boil. Add tea bags.

After both pans are boiling, add the tea to the water and sugar. Add orange juice, pineapple juice, and lemon juice. Bring to a boil and serve!

 

Homemade Vegetable Beef Soup

  • 1 lb beef stew meat
  • 1 onion
  • 3 celery ribs
  • 10 baby carrots
  • 2 potatoes
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 2 cans diced tomatoes
  • 3 ½ cups beef broth
  • 2 small bay leaves
  • 2 teaspoons garlic powder
  • 2 tablespoons olive oil
  • 4 cups water
  • 2 teaspoons hot pepper sauce

Cut meat into small, bite-size pieces. In a large pot or dutch oven, saute meat in 1 tbsp of oil on medium-high heat until all sides are brown. Set aside.

Chop celery, onion, potatoes, and carrots into bit sized pieces. Saute celery and onion in remaining oil until onion is golden.

Add browned beef, water, broth, tomatoes with juices, carrots, potatoes, corn, bay leaves, and garlic. Bring to a boil.

Reduce heat and simmer uncovered until beef is almost tender, about an hour.

Add peas and hot sauce to soup. Cover and simmer until beef is tender, about 30 mins longer.

Serve and season with whatever you like!
